Cajun (cay-jun) - the nickname for Acadians, the French speaking people who migrated to Louisiana from Nova Scotia. This French influence gave their cooking a lot of flavor. Blending in the local cuisine, natural grown herbs, spices, peppers, all gave their food, a unique taste, and flare, matched nowhere else. The myth about Cajun cooking is that it has to be "Hot, or it's not Cajun." This is simply is not true! | I remember when I wus a kid bringin da wood fer dee big ole kitchen stove. Momma (Kay) working fer days to make her de best Gumbo round. She use the freshest spices available, hand picked dat day. De smell of chicken cookin in the pot, de aroma of shrimp stock, simmering in the pan makes me mouth water. Fry'en up homemade sausage spiced jus soo mmm right. Stirrin up a mess of okra, and celery to get it just soo.. Tender peppers, and onions simmerin on the back of de stove, de sound of spiced sausages brownin in the big ole cast iron fry pan, brings it all back. | |||
| Da memories of how Pappy (Jon) used the drippins to make the roux. We all had to stir the pots, an clean de dishes, an helpin momma do the cookin. But the secret in all our cooking was pappy's special blend o' seasonings, hot sauces an spices. |

I member too, sittin at de big wooden table, spicin up, and chowin down, on dees bigen bowls of hot-n-spicy videls. After eatin we'd git so hot, we'd go outside, takes ours cloths off, an jump buck naked into de bayou, two cools us down some, an go back fo more, of that great Cajun cookin. Mmmmmmm |

| Yah, I would say my Pappy wus the King with his blend of seasonings an sauces. Dee Frends an naghbours wood come fer miles to git his sauces, seasonings, and spices, and taste de fine Cajun cookin. As they left with a bigin smile, on dier faces they'd say "Bye Kay/Jon". an' dat later was just Kajun and den, afta we become called "Kajun King". |

Movin around the South Bayou Country, Pappy showed me later, how to select, and blend, de spices, an peppers, to get no after burn. We'd mix dem seasonin just right, an hand pack all um, an send'em to the folks dat wants dem. Now I will pass the real secret, for all the Great Flavorful Gourmet Cookin onto you. |
